When canning, or making jellies a great resource to have is the Ball Blue Book of Canning. It gives step by step procedures of how to process food, if you have never canned. I highly recommend it. It is also important to make sure the jars seal. In other words, the lid seal shut by topping down when it cools. If you have any questions, you can always email or call.
If you substitute honey for sugar the ratio is for 1 cup of sugar, use 3/4 cup honey for pickles. For jams I use 1/2 cup of honey for 1 cup of sugar.
To make easy and delicious jams and jellies, I cheat, use Sure Jel or some type of fruit pectin. Then follow the instructions in the box. So easy and so delicious too.
