Pickled Okra 4 qts. small okra pods 3 cups water 3 cups vinegar 1/3 cup canning salt 2 tsp. dill seed 4 cloves garlic 2 small hot red peppers, cut in half ( you can omit, if you do not like hot peppers) Trim stems of okra set aside, Combine water, vinegar, salt and dill seed, bring to boil Pack okra into hot jars, leave 1/4 in. head space. Put 1 garlic clove and one half pepper in each jar. Laddle hot liquid over okrs. Adjust steralized two piece lids.(Ball Blue Book of Canning) Note: when cutting peppers or seeding, wear rubber gloves to present hands form being burned.
